Ingredients

  • 1 cup pumpkin puree
  • 4 oz goat cheese, softened
  • 2 oz cream cheese, softened
  • 2 tablespoons sour cream or Greek yogurt
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried thyme or rosemary
  • 1/4 teaspoon paprika
  • 2 tablespoons grated parmesan cheese
  • 1 tablespoon fresh parsley or chives, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine pumpkin puree, goat cheese, cream cheese, and sour cream until smooth.
  3. Stir in olive oil, minced garlic, salt, black pepper, thyme or rosemary, and paprika.
  4. Transfer the mixture to a small baking dish and spread evenly.
  5. Sprinkle grated parmesan cheese over the top.
  6. Bake for 20 to 25 minutes until hot, bubbly, and slightly golden on top.
