This Baked Gruyère Tomato Bruschetta is a warm, comforting appetizer featuring crispy toasted baguette slices topped with juicy tomatoes and nutty, melted Gruyère cheese. It’s an easy recipe that’s perfect for parties, light lunches, or serving alongside your favorite soups and salads.

Ingredients

  • 1 French baguette, sliced into 1/2-inch pieces
  • 2 tablespoons extra-virgin olive oil
  • 2 cups cherry tomatoes, halved
  • 1½ cups shredded Gruyère cheese
  • 2 cloves garlic, minced
  • 1 tablespoon fresh basil, chopped
  • 1 teaspoon fresh thyme leaves (optional)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon balsamic glaze (optional)
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Arrange the baguette slices on the baking sheet and brush both sides lightly with olive oil.
  3. Toast the bread for about 5 minutes until lightly golden.
  4. In a bowl, combine the cherry tomatoes, garlic, chopped basil, thyme if using, salt, black pepper, and a small drizzle of olive oil.
  5. Spoon the tomato mixture evenly onto each toasted baguette slice.
  6. Sprinkle the shredded Gruyère cheese generously over the tomatoes.
  7. Bake for 8–10 minutes, or until the cheese is melted, bubbly, and lightly golden.
  8. Remove from the oven and let cool for 1–2 minutes.
  9. Drizzle with balsamic glaze if desired and garnish with fresh basil leaves before serving.

Notes

  • Substitute mozzarella, fontina, Swiss, or provolone for the Gruyère if desired.
  • Add crispy bacon, diced prosciutto, or grated Parmesan for extra flavor.
