Baked Cheesy Ranch Potatoes combine crispy roasted potatoes with savory ranch seasoning, garlic, cheddar, and Parmesan. This easy, comforting side dish is perfect for weeknight dinners, parties, potlucks, and barbecues.

Ingredients

  • Baby potatoes or Yukon Gold potatoes
  • Olive oil
  • Dry ranch seasoning mix
  • Garlic powder
  • Onion powder
  • Paprika
  • Black pepper
  • Salt, if needed
  • Sharp cheddar cheese, freshly shredded
  • Parmesan cheese
  • Green onions, sliced
  • Fresh parsley, chopped
  • Cooked and crumbled bacon, optional

Instructions

  1. Preheat the oven to 425°F (220°C) and lightly grease a large baking sheet or line it with parchment paper.
  2. Wash and thoroughly dry the potatoes, then cut them into evenly sized bite-sized pieces.
  3. Place the potatoes in a large mixing bowl and drizzle with olive oil.
  4. Add the ranch seasoning, garlic powder, onion powder, paprika, and black pepper. Toss until the potatoes are evenly coated.
  5. Add salt only if needed, keeping in mind that ranch seasoning and cheese can already contain significant salt.
  6. Arrange the potatoes in a single layer on the prepared baking sheet, leaving space between the pieces.
  7. Roast for 30–35 minutes, turning halfway through, until golden around the edges and fork-tender.
  8. Sprinkle the shredded cheddar and Parmesan evenly over the roasted potatoes.
  9. Return the potatoes to the oven for 5–7 minutes, until the cheese is completely melted and beginning to turn golden in spots.
  10. Sprinkle with cooked crumbled bacon if desired.
  11. Finish with sliced green onions and fresh parsley, then serve while hot and cheesy.
