Baileys Cheesecake is a rich and creamy dessert infused with smooth Baileys Irish Cream and decadent chocolate flavor. With its velvety filling and buttery chocolate crust, this elegant cheesecake is perfect for holidays, celebrations, or special occasions.

Ingredients

  • 2 cups chocolate cookie crumbs
  • 1/2 cup unsalted butter, melted
  • 3 packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 3/4 cup Baileys Irish Cream
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 4 ounces melted semi-sweet chocolate
  • Whipped cream, optional for topping
  • Chocolate shavings, optional for topping
  • Cocoa powder, optional for topping

Instructions

  1. Preheat the oven to 325°F.
  2. In a bowl, combine chocolate cookie crumbs and melted butter.
  3. Press the mixture firmly into the bottom of a springform pan.
  4. Bake the crust for 10 minutes, then allow it to cool slightly.
  5. In a large mixing bowl, beat the cream cheese and sugar until smooth.
  6. Add the eggs one at a time, mixing after each addition.
  7. Mix in Baileys Irish Cream, vanilla extract, sour cream, and melted chocolate until fully combined.
  8. Pour the cheesecake filling over the crust and smooth the top.
  9. Bake for 55 to 65 minutes until the center is slightly set.
  10. Turn off the oven and allow the cheesecake to cool gradually with the oven door slightly open.
  11. Refrigerate for at least 4 hours or overnight.
  12. Garnish with whipped cream, chocolate shavings, or cocoa powder before serving if desired.
