Avocado Toast with Tomato combines creamy seasoned avocado, juicy ripe tomatoes, and crisp toasted bread for a fresh and satisfying meal. Ready in about 10 minutes, it is perfect for breakfast, brunch, lunch, or a quick snack.

Ingredients

  • 2 thick slices sourdough or whole-grain bread
  • 1 large ripe avocado
  • 1 medium ripe tomato or 1 cup cherry tomatoes
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon extra-virgin olive oil, plus more for serving
  • 1/4 teaspoon kosher salt, or to taste
  • 1/8 teaspoon freshly ground black pepper
  • Pinch of red pepper flakes, optional
  • Fresh basil, parsley, or cilantro, optional

Instructions

  1. Toast the bread until crisp and golden around the edges. For extra flavor, lightly brush it with olive oil and toast in a skillet or under the broiler until golden.
  2. Cut the avocado in half, remove the pit, and scoop the flesh into a small bowl. Add the lemon juice, salt, and black pepper, then mash with a fork, leaving a few small pieces for texture.
  3. Slice the tomato into thin rounds, or halve or quarter the cherry tomatoes. If the tomatoes are particularly juicy, gently blot away excess moisture to help keep the toast crisp.
  4. Divide the mashed avocado between the warm slices of toast and spread it evenly toward the edges.
  5. Arrange the tomatoes over the avocado. Drizzle with a little extra-virgin olive oil and season with additional salt and black pepper to taste. Add red pepper flakes if desired.
  6. Finish with fresh basil, parsley, or cilantro if desired and serve immediately while the bread is crisp.

Notes

  • Choose a ripe avocado that yields slightly to gentle pressure for the creamiest texture.
  • Thick sourdough, whole-grain, multigrain, or rustic country bread provides a sturdy base for the toppings.
  • For a more substantial breakfast, top each slice with a poached, fried, scrambled, or soft-boiled egg.
  • For a salty variation, add crumbled feta and slightly reduce the added salt.
  • For a Caprese-inspired version, add fresh mozzarella, basil, and a drizzle of balsamic glaze.
  • For extra heat, add more red pepper flakes, sliced jalapeño, or hot sauce.
  • Everything bagel seasoning can be sprinkled over the finished toast for additional flavor and crunch.
  • For advance preparation, keep the avocado mixture, tomatoes, and bread separate. Press plastic wrap directly against the avocado mixture and refrigerate in an airtight container.
  • Do not store or reheat assembled avocado toast. Toast the bread separately and assemble immediately before serving for the best texture.
