Ingredients

  • 68 slices bread (sourdough, whole grain, baguette)
  • 3 ripe avocados
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cherry tomatoes
  • 1 cup sliced cucumbers
  • 1/2 cup sliced radishes
  • 4 oz smoked salmon
  • 3 boiled eggs, sliced
  • 1/2 cup feta or goat cheese
  • 1 cup microgreens or arugula
  • 1 tsp red pepper flakes
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1/4 cup nuts or seeds

Instructions

  1. Toast bread slices until golden and crisp, then arrange on a large serving board.
  2. In a bowl, mash avocados with lemon juice, salt, and pepper until smooth or slightly chunky.
  3. Transfer mashed avocado to a serving bowl and place on the board.
  4. Prepare toppings by slicing vegetables, boiling eggs, and portioning cheeses and proteins.
  5. Arrange all toppings neatly around the board in sections or small bowls.
