Homemade Buttermilk Syrup is a rich, buttery breakfast syrup with a smooth texture and warm caramel-like flavor. Serve it warm over pancakes, waffles, French toast, crepes, or biscuits.

Ingredients

  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • Pinch of salt

Instructions

  1. Add the butter, granulated sugar, buttermilk, and salt to a medium saucepan.
  2. Heat over medium heat, stirring frequently, until the butter melts and the sugar begins to dissolve.
  3. Bring the mixture to a gentle boil and cook for 2 to 3 minutes, stirring frequently.
  4. Remove the saucepan from the heat and carefully stir in the vanilla extract and baking soda.
  5. Whisk until combined. The syrup will foam considerably when the baking soda is added, so use a saucepan with plenty of extra room.
  6. Let the syrup rest for a few minutes until the foam settles and the syrup becomes smooth.
  7. Serve warm over pancakes, waffles, French toast, crepes, or other breakfast favorites.

Notes

  • Use a medium or large saucepan because the syrup foams and expands significantly after the baking soda is added.
  • For a deeper flavor, substitute light brown sugar for part or all of the granulated sugar.
  • Add a small pinch of cinnamon for a warm spiced variation.
  • The syrup thickens slightly as it cools.
  • Store cooled leftover syrup in an airtight container in the refrigerator for up to 1 to 2 weeks.
  • Reheat gently in a saucepan over low heat or microwave briefly, stirring before serving.
  • If the refrigerated syrup separates, warm it gently and whisk until smooth again.
