Avocado Boba is a creamy and refreshing bubble tea-inspired drink made with ripe avocados, milk, and chewy tapioca pearls. Smooth, lightly sweet, and satisfying, it’s perfect as a snack, dessert, or cooling beverage.

Ingredients

  • 2 ripe avocados
  • 2 cups milk of choice
  • 1/4 cup sweetened condensed milk
  • 1 tablespoon honey or sugar, optional
  • 1 cup ice cubes
  • 1/2 cup black tapioca pearls (boba)
  • 6 cups water
  • 2 tablespoons simple syrup or brown sugar syrup

Instructions

  1. Cook the tapioca pearls according to the package instructions.
  2. Drain the pearls and transfer them to a bowl.
  3. Toss the cooked boba with the simple syrup or brown sugar syrup to keep them soft and flavorful.
  4. Cut the avocados in half, remove the pits, and scoop the flesh into a blender.
  5. Add the milk, sweetened condensed milk, and ice cubes.
  6. Blend until completely smooth and creamy.
  7. Taste and adjust sweetness with honey or sugar if desired.
  8. Spoon the prepared boba pearls into two serving glasses.
  9. Pour the avocado mixture over the boba.
  10. Serve immediately with a wide bubble tea straw.
