Asparagus Risotto is a creamy and comforting Italian-inspired dish featuring tender asparagus, rich Parmesan cheese, and velvety arborio rice slowly cooked in flavorful broth. This elegant recipe is perfect for spring dinners, special occasions, or cozy meals at home.

Ingredients

  • 1 1/2 cups arborio rice
  • 1 bunch asparagus, trimmed and cut into pieces
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 4 cups vegetable or chicken broth
  • 1/2 cup dry white wine
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1/2 cup grated Parmesan cheese
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat the broth in a saucepan and keep it warm over low heat.
  2. In a large skillet or saucepan, heat olive oil and 1 tablespoon of butter over medium heat.
  3. Add the onion and cook until softened and translucent.
  4. Stir in the garlic and cook briefly until fragrant.
  5. Add the arborio rice and stir for 1 to 2 minutes until lightly toasted.
  6. Pour in the white wine and cook until mostly absorbed.
  7. Begin adding the warm broth one ladle at a time, stirring frequently and allowing the liquid to absorb before adding more.
  8. Continue adding broth and stirring for about 18 to 20 minutes until the rice becomes creamy and tender.
  9. During the final few minutes of cooking, stir in the asparagus pieces.
  10. Remove the risotto from heat once the rice is tender and creamy.
  11. Stir in the remaining butter and Parmesan cheese.
  12. Season with salt and black pepper to taste.
  13. Garnish with fresh parsley if desired and serve immediately.
