These Asparagus Pastry Bundles wrap tender seasoned asparagus, creamy cheese, and flavorful shredded cheese in flaky golden puff pastry. They make an elegant yet easy appetizer or side dish for brunch, holidays, and spring gatherings.

Ingredients

  • 1 sheet frozen puff pastry, thawed
  • 1 pound fresh asparagus
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces cream cheese, softened
  • 1/2 cup shredded Gruyère, mozzarella, or Parmesan cheese
  • 1 teaspoon Dijon mustard, optional
  • 1 large egg
  • 1 tablespoon water
  • 1 teaspoon sesame seeds or everything bagel seasoning, optional

Instructions

  1. Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Wash and dry the asparagus and trim away the woody ends. Toss the asparagus with olive oil, salt, and black pepper.
  3. Unfold the thawed puff pastry on a lightly floured surface and gently roll it out to smooth the folds.
  4. Cut the puff pastry into 8 equal squares.
  5. Spread a small amount of softened cream cheese diagonally across the center of each pastry square. If using Dijon mustard, spread a thin layer over the cream cheese.
  6. Sprinkle a little shredded cheese over each pastry square.
  7. Place 3 to 4 asparagus spears diagonally across each square, adjusting the quantity according to the thickness of the asparagus.
  8. Fold one pastry corner over the asparagus, then bring the opposite corner over the top. Gently press the overlapping pastry together to secure each bundle.
  9. Whisk the egg with 1 tablespoon water. Brush the exposed pastry with the egg wash and sprinkle with sesame seeds or everything bagel seasoning, if using.
  10. Arrange the bundles on the prepared baking sheet with space between them.
  11. Bake for 18 to 22 minutes, or until the puff pastry is risen, crisp, and golden brown and the asparagus is tender.
  12. Let the bundles cool for a few minutes before serving warm.

Notes

  • Medium or thin fresh asparagus works best because it becomes tender in approximately the same time the puff pastry takes to bake.
  • Keep the puff pastry cool before baking and avoid excessive wet ingredients for the crispiest results.
  • Gruyère, Parmesan, mozzarella, goat cheese, or feta can be used to create different flavor variations.
  • For a garlic and herb variation, mix garlic powder, chives, parsley, or dill into the softened cream cheese.
  • The bundles can be assembled several hours ahead and refrigerated until needed. Apply the egg wash shortly before baking.
  • Store cooled leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat in a 350°F (175°C) oven for 8 to 10 minutes or in an air fryer for a few minutes until warm and crisp.
  • Avoid microwaving when possible because it can soften the puff pastry.
