A light and elegant tart featuring flaky pastry, creamy goat cheese, and fresh asparagus with aromatic tarragon. Perfect for brunch, lunch, or a simple yet impressive meal.

Ingredients

  • 1 sheet puff pastry or tart crust
  • 1 bunch asparagus, trimmed
  • 4 oz goat cheese, crumbled
  • 3 eggs
  • 1/2 cup heavy cream
  • 2 cloves garlic, minced
  • 1 tbsp fresh tarragon, chopped
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup Parmesan cheese (optional)
  • 1 tsp lemon zest (optional)

Instructions

  1. Preheat the oven to 190°C (375°F).
  2. Roll out puff pastry and place it into a tart pan or on a baking sheet, trimming edges as needed.
  3. Prick the base lightly with a fork.
  4. In a bowl, whisk together eggs, heavy cream, garlic, salt, and black pepper.
  5. Spread goat cheese evenly over the pastry base.
  6. Pour the egg mixture over the cheese.
  7. Arrange asparagus spears neatly on top.
  8. Drizzle with olive oil and sprinkle with tarragon.
  9. Add Parmesan and lemon zest if using.
  10. Bake for 30–35 minutes until the filling is set and the pastry is golden.
  11. Cool slightly before slicing and serving.

  • Add caramelized onions for extra sweetness.
