Asian Slaw is a crisp and colorful salad made with crunchy cabbage, carrots, and fresh herbs tossed in a sweet, tangy, and savory dressing. Perfect as a refreshing side dish, taco topping, or light lunch, this vibrant slaw is packed with bold Asian-inspired flavor.

Ingredients

  • 4 cups green cabbage, thinly sliced
  • 2 cups purple cabbage, thinly sliced
  • 2 carrots, shredded
  • 3 green onions, sliced
  • 1/4 cup fresh cilantro, chopped
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • 1 tbsp lime juice
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1/4 cup sliced almonds (optional)
  • 2 tbsp sesame seeds (optional)
  • 1/4 cup chopped peanuts (optional)
  • 1/2 cup edamame (optional)
  • 1/2 red bell pepper, thinly sliced (optional)
  • 1/2 cup crushed ramen noodles (optional)

Instructions

  1. Thinly slice the green cabbage and purple cabbage.
  2. Shred the carrots and slice the green onions.
  3. Add the cabbage, carrots, green onions, and cilantro to a large mixing bowl.
  4. In a separate bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, lime juice, garlic, and ginger.
  5. Pour the dressing over the slaw mixture.
  6. Toss thoroughly until all vegetables are evenly coated.
  7. Add optional toppings like sesame seeds, almonds, peanuts, or crushed ramen noodles.
  8. Refrigerate for at least 15 minutes before serving for the best flavor.
  9. Toss again before serving.

  • Pre-shredded coleslaw mix can be used for convenience.
  • Add grilled chicken, shrimp, tofu, or salmon for extra protein.
  • Use tamari or gluten-free soy sauce for a gluten-free version.
