Ingredients

  • 4 Arctic char fillets (about 6 oz each)
  • 2 cups cooked quinoa or brown rice
  • 4 cups baby spinach or mixed greens
  • 1 avocado, sliced
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded carrots
  • 1 cup cooked edamame
  • 2 tbsp olive oil, divided
  • 2 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley or dill, chopped
  • 2 tbsp sesame seeds or pumpkin seeds (optional)

Instructions

  1. Season the Arctic char fillets with salt and black pepper.
  2. Heat 1 tablespoon of olive oil in a skillet over medium heat and cook the fish for 4 to 5 minutes per side, until it flakes easily with a fork.
  3. Whisk together the remaining olive oil, lemon juice, Dijon mustard, garlic, and fresh herbs to make the dressing.
  4. Divide the cooked quinoa or brown rice among four serving bowls.
  5. Arrange the spinach, cucumber, cherry tomatoes, shredded carrots, edamame, and avocado around the grains.
  6. Place the cooked Arctic char on top of each bowl.
  7. Drizzle the dressing over the bowls and sprinkle with sesame seeds or pumpkin seeds if desired.
  8. Serve immediately while the fish is warm.
