  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1 tsp pumpkin pie spice
  • 1 cup pumpkin purée
  • 1 medium apple, peeled and diced or grated
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup vegetable oil or melted butter
  • 1 tsp vanilla extract
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, and pumpkin pie spice in a large bowl.
  3. In a separate bowl, mix the pumpkin purée, brown sugar, granulated sugar, eggs, oil, and vanilla until smooth.
  4. Gradually add the wet ingredients to the dry ingredients and stir until just combined.
  5. Fold in the diced or grated apple and the chopped nuts if using.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Slice and serve once fully cooled.

Notes

  • Add raisins, dried cranberries, or chocolate chips for extra flavor.
  • Substitute pecans for walnuts if preferred.
  • Replace part of the all-purpose flour with whole wheat flour for a heartier loaf.
  • Sprinkle cinnamon sugar or pumpkin seeds over the batter before baking.
  • Drizzle with a simple vanilla glaze after cooling for added sweetness.
  • Store at room temperature for up to 3 days, refrigerate for up to 1 week, or freeze for up to 3 months.
