Apple Pie Overnight Oats combine creamy rolled oats, crisp apple, Greek yogurt, maple syrup, and warm spices for an easy make-ahead breakfast. Prepare them in minutes and refrigerate overnight for a cozy apple-cinnamon breakfast ready by morning.

Ingredients

  • 1/2 cup old-fashioned rolled oats
  • 1/2 medium apple, finely chopped or grated
  • 1/2 cup milk
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon maple syrup or honey
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon chia seeds, optional
  • 1/8 teaspoon ground nutmeg, optional
  • 1 pinch salt
  • 1 tablespoon chopped pecans or walnuts, optional for serving

Instructions

  1. Wash and finely chop or grate the apple. Peel the apple first if desired.
  2. Add the rolled oats, apple, milk, Greek yogurt, maple syrup or honey, cinnamon, vanilla extract, chia seeds, nutmeg, and salt to a jar or airtight container.
  3. Stir thoroughly until the oats are evenly coated with the milk and yogurt mixture and the apple is well distributed.
  4. Cover the container and refrigerate for at least 6 hours or overnight.
  5. Stir the oats again before serving. If the mixture is too thick, add a small splash of milk until it reaches the desired consistency.
  6. Top with additional chopped apple, cinnamon, and chopped pecans or walnuts if desired.
  7. Serve cold directly from the refrigerator or gently warm the oats in the microwave, stirring occasionally until heated through.

Notes

  • Old-fashioned rolled oats provide a creamy texture while retaining more structure than quick oats.
  • Steel-cut oats are not recommended as a direct substitute because they require different liquid proportions and soaking times.
  • For a flavor closer to apple pie filling, briefly cook the chopped apple with cinnamon and a little maple syrup, then cool it before adding it to the oats.
  • Add nuts or granola immediately before serving to keep them crunchy.
  • For a dairy-free version, substitute plant-based milk and dairy-free yogurt.
  • For extra richness, stir in almond butter, peanut butter, or another nut butter before serving.
  • Store the overnight oats in an airtight container in the refrigerator and enjoy within 3 to 4 days.
  • If the oats become too thick after chilling or reheating, stir in a splash of milk before serving.
