This apple pie oatmeal tastes like a warm slice of apple pie in a breakfast bowl. Creamy rolled oats are simmered with tender cinnamon-spiced apples, a touch of maple syrup, and vanilla, then topped with crunchy pecans and a drizzle of extra syrup. It cooks in one pot in about 15 minutes and makes a cozy, wholesome start to chilly mornings.

Ingredients

  • 2 medium apples (Honeycrisp, Fuji, or Granny Smith), peeled and diced into 1/2-inch pieces
  • 1 tablespoon unsalted butter or coconut oil
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground allspice or ginger (optional)
  • 2 tablespoons pure maple syrup or brown sugar, plus extra for serving
  • 1 cup (90 g) old-fashioned rolled oats
  • 1 cup (240 ml) milk of choice
  • 1 cup (240 ml) water
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon fine sea salt
  • 1/4 cup (30 g) chopped pecans or walnuts, toasted
  • Plain Greek yogurt or a splash of cream, for serving (optional)

Instructions

  1. Melt the butter in a medium saucepan over medium heat. Add the diced apples, cinnamon, nutmeg, and allspice and cook for 4 to 5 minutes, stirring often, until the apples begin to soften.
  2. Stir in the maple syrup and cook for 1 minute more, until the apples are glazed and lightly syrupy.
  3. Remove about half of the apple mixture and set aside for topping.
  4. Add the oats, milk, water, vanilla extract, and salt to the saucepan with the remaining apples.
  5. Bring to a gentle boil, then reduce the heat to medium-low. Simmer for 5 to 7 minutes, stirring occasionally, until the oats are creamy and tender.
  6. Remove from the heat and let sit for 2 minutes to thicken. Add a splash of milk if you prefer a looser texture.
  7. Divide the oatmeal between two bowls. Top with the reserved cinnamon apples, toasted pecans, and a dollop of Greek yogurt if desired.
  8. Drizzle with extra maple syrup and serve warm.

Notes

  • For the best texture, use old-fashioned rolled oats. Quick oats will cook faster but turn softer.
  • Granny Smith apples add a tart contrast, while Honeycrisp and Fuji give a sweeter, juicier flavor.
  • Toast the nuts in a dry skillet for 3 to 4 minutes for extra crunch and flavor.
  • For a vegan version, use coconut oil and plant-based milk.
  • For a gluten-free option, use certified gluten-free oats.
  • Stir in a spoonful of peanut or almond butter for extra protein and creaminess.
  • To meal prep, store the oatmeal and cinnamon apples separately in the refrigerator for up to 4 days. Reheat with a splash of milk.
  • Make an overnight version by soaking the oats in milk in the refrigerator, then topping with the warm cinnamon apples.
