Apple Napoleons layer crisp, flaky puff pastry with tender cinnamon-spiced apples and smooth vanilla whipped cream. Finished with powdered sugar and optional caramel or toasted nuts, they make an elegant yet approachable dessert.

Ingredients

  • 1 sheet puff pastry, thawed
  • 1 large egg
  • 1 tablespoon water, for egg wash
  • 1 tablespoon granulated sugar
  • 3 medium apples, peeled, cored, and diced
  • 2 tablespoons unsalted butter
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon vanilla extract, for the apple filling
  • 1 teaspoon cornstarch
  • 1 tablespoon water, for the cornstarch mixture
  • 1 cup heavy whipping cream, cold
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract, for the cream filling
  • Powdered sugar, for dusting
  • Caramel sauce, optional
  • Chopped toasted pecans or walnuts, optional

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Unfold the thawed puff pastry on a lightly floured surface and gently roll it into an even rectangle. Cut into 9 equal rectangles and arrange them on the prepared baking sheet.
  3. Whisk the egg with 1 tablespoon water. Lightly brush the pastry with the egg wash and sprinkle with granulated sugar.
  4. Place another sheet of parchment paper over the pastry and set a second baking sheet on top to lightly weigh it down.
  5. Bake for 15–20 minutes, or until crisp and golden. Remove the upper baking sheet during the final few minutes if additional browning is needed. Transfer the pastry to a wire rack and cool completely.
  6. For the apple filling, melt the butter in a skillet over medium heat. Add the diced apples, brown sugar, cinnamon, nutmeg, and lemon juice.
  7. Cook for 6–8 minutes, stirring occasionally, until the apples are tender but still hold their shape.
  8. Mix the cornstarch with 1 tablespoon water until smooth. Stir it into the apples and cook for another 1–2 minutes, until the juices thicken slightly. Remove from the heat, stir in the vanilla, and allow the filling to cool.
  9. For the cream filling, beat the cold heavy whipping cream, 1/4 cup powdered sugar, and vanilla until medium-stiff peaks form. Refrigerate until ready to assemble.
  10. Carefully split each cooled puff pastry rectangle horizontally to create thinner pastry layers.
  11. Place a pastry layer on a serving plate and top with whipped cream and apple filling. Add another pastry layer and repeat with more cream and apples, then finish with a final pastry layer.
  12. Dust the assembled Napoleons with powdered sugar just before serving. Drizzle with caramel sauce and garnish with toasted pecans or walnuts if desired.

Notes

  • Firm apples such as Granny Smith, Honeycrisp, Pink Lady, Braeburn, or Fuji work well because they hold their shape during cooking.
  • For caramel apple Napoleons, drizzle caramel between the layers and add a pinch of flaky salt for a salted caramel variation.
  • Add toasted pecans or walnuts between the layers for extra crunch.
  • Vanilla pastry cream can replace the whipped cream for a richer, more traditional Napoleon-style filling.
  • For an apple-pear variation, use equal amounts of diced apple and pear.
  • Dried cranberries can be added during the final few minutes of cooking the apples.
  • For stronger spice, add a pinch of ground cloves, ginger, or allspice.
  • For the crispest texture, assemble the Napoleons shortly before serving.
  • Store apple filling and whipped cream separately in the refrigerator for up to 2–3 days and baked puff pastry in an airtight container at room temperature for 1–2 days.
  • Unfilled puff pastry can be refreshed in a 350°F (175°C) oven for about 5 minutes, then cooled before assembly.
