Apple Cinnamon Protein Muffins are moist, flavorful muffins packed with the natural sweetness of apples and warm cinnamon spice, boosted with protein powder for a nutritious start to your day or a satisfying snack.

Ingredients

  1. 1 1/2 cups whole wheat flour or oat flour
    1/2 cup vanilla or unflavored protein powder
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1 tablespoon ground cinnamon
    1 cup peeled and finely chopped apple (about 1 medium apple)
    2 large eggs
    1/3 cup maple syrup or honey
    1/4 cup unsweetened applesauce
    1 teaspoon vanilla extract
    1/2 cup unsweetened almond milk or milk of choice

Instructions

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease well.

  1. In a large bowl, whisk together flour, protein powder, baking powder, baking soda, salt, and cinnamon.
  2. In another bowl, combine eggs, maple syrup, applesauce, vanilla extract, and almond milk.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Fold in the chopped apples.
  5. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  6. Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes
