Aperol and Orange Steamed Puddings

Soft, moist individual steamed puddings flavored with fresh orange and bittersweet Aperol. A warm orange and Aperol syrup gives each tender sponge a glossy, citrus-forward finish.

Ingredients

  • Unsalted butter, softened
  • Granulated or caster sugar
  • Large eggs
  • All-purpose flour
  • Baking powder
  • Fine salt
  • Fresh orange zest
  • Fresh orange juice
  • Aperol
  • Vanilla extract
  • Whole milk, as needed
  • Aperol, for the syrup

Instructions

  1. Generously butter 6 individual pudding molds or heatproof ramekins, coating the bottoms and sides thoroughly. Prepare pieces of parchment paper and foil large enough to cover each mold.
  2. Beat the softened butter and sugar for a few minutes until pale and fluffy. Gradually add the eggs, beating well between additions.
  3. Mix in the finely grated orange zest, fresh orange juice, Aperol, and vanilla extract.
  4. Whisk the flour, baking powder, and salt together in a separate bowl. Gently fold the dry ingredients into the butter mixture. If the batter is particularly thick, add enough whole milk to create a soft consistency that drops easily from a spoon.
  5. Divide the batter evenly among the prepared molds, leaving room at the top for the puddings to rise.
  6. Cover each mold with parchment paper and foil, making a small pleat in the center to allow the sponge to expand. Secure the coverings around the molds.
  7. Place the molds in a large, deep pan and carefully pour hot water around them until it reaches approximately halfway up their sides. Cover the pan and steam over a gentle, steady simmer for 35 to 45 minutes. Add more hot water if necessary to maintain the water level.
  8. Check a pudding by inserting a skewer into the center. The puddings are ready when the skewer comes out clean or with only a few moist crumbs.
  9. While the puddings steam, combine the Aperol, fresh orange juice, granulated sugar, orange zest, and water for the syrup in a small saucepan. Simmer gently for 10 to 15 minutes, until the sugar dissolves and the liquid reduces to a light syrup.
  10. For a stronger Aperol flavor, remove the syrup from the heat and stir in a small additional splash of Aperol.
  11. Let the cooked puddings stand for about 5 minutes. Carefully run a thin knife around the edges and turn each pudding onto a serving plate.
  12. Spoon the warm orange and Aperol syrup generously over each pudding. Garnish with optional fresh orange zest or orange segments and serve immediately with crème fraîche, vanilla ice cream, or custard if desired.

Notes

  • Keep the steaming water at a gentle, consistent simmer and check occasionally that it has not evaporated excessively.
  • The exact steaming time depends on the size and depth of the pudding molds.
  • For stronger orange flavor, use additional finely grated zest rather than excessive juice, which can make the batter too wet.
  • Blood orange juice can replace regular orange juice for a colorful variation.
  • Ground cardamom or ginger can be added to the batter for a warmly spiced version.
  • Finely chopped candied orange peel can be folded into the batter for additional citrus flavor and texture.
