Antipasto skewers are a colorful, flavorful appetizer made with a variety of Italian ingredients like savory meats, cheeses, olives, and marinated vegetables, all threaded onto skewers for easy serving.

Ingredients

  1. Cherry tomatoes
    Mozzarella balls (or bocconcini)
    Pepperoni or salami slices
    Kalamata olives
    Artichoke hearts (marinated or canned)
    Roasted red peppers
    Fresh basil leaves
    Balsamic glaze (optional)
    Olive oil
    Salt and pepper (to taste)

Instructions

Prepare all the ingredients by cutting the roasted red peppers and artichoke hearts into bite-sized pieces if needed.

  1. Take wooden skewers and start threading the ingredients in a pattern you like. A good suggestion is to alternate between tomatoes, mozzarella balls, meats, olives, and artichokes. You can also add fresh basil leaves between the ingredients.
  2. Once your skewers are assembled, drizzle olive oil over the top and sprinkle with salt and pepper to taste.
  3. If desired, finish with a drizzle of balsamic glaze for added flavor.
  4. Serve immediately or refrigerate until ready to serve.

  • Vegetarian: Skip the meats and focus on more vegetables and cheeses. Add things like cherry peppers, cucumbers, or fresh mozzarella for a lighter version.
  • Vegan: Use vegan mozzarella and omit the meats. You can substitute with marinated mushrooms or other plant-based options.
  • Different Cheeses: Try using different types of cheese such as provolone, goat cheese, or feta for varied flavor profiles.
  • Marinated Veggies: For an extra flavor kick, use marinated mushrooms or zucchini along with your other vegetables.
  • Storage: Store the skewers in an airtight container in the refrigerator for up to 2 days. They can be served cold directly from the fridge, or briefly heated in the oven for a few minutes.
  • Grilling: You can grill the skewers for a smoky flavor, brushing with olive oil beforehand.
