Almond Lace Tuiles are delicate, crisp French cookies with a rich buttery almond flavor and an elegant lace-like appearance. They are perfect for serving with coffee, tea, ice cream, or as a beautiful dessert garnish.

Ingredients

  • Flaked or sliced almonds
  • Granulated sugar
  • All-purpose flour
  • Unsalted butter, melted
  • Orange juice
  • Vanilla extract (optional)
  • Pinch of salt

Instructions

  1. Preheat the oven and line baking trays with parchment paper or silicone baking mats.
  2. Combine the granulated sugar and all-purpose flour in a mixing bowl.
  3. Stir in the melted butter, orange juice, vanilla extract (if using), and salt until smooth.
  4. Gently fold in the flaked or sliced almonds until evenly coated.
  5. Refrigerate the batter for 2 hours until firm.
  6. Place small spoonfuls of batter onto the prepared baking trays, leaving plenty of space between each portion.
  7. Bake for 18 to 20 minutes, or until the cookies spread and become golden brown around the edges.
  8. While still warm and flexible, carefully lift each tuile and drape it over a rolling pin or bottle to create the classic curved shape.
  9. Allow the cookies to cool completely before serving or storing.

Notes

  • Add lemon zest for a brighter citrus flavor.
  • Use slivered almonds for a slightly thicker texture.
  • Drizzle cooled tuiles with melted dark chocolate for an elegant finish.
  • Add a pinch of cinnamon or cardamom for a warm spiced flavor.
  • Shape warm tuiles into bowls for serving berries, mousse, or ice cream.
  • Store in an airtight container at room temperature for up to 5 days.
  • Refresh softened cookies in a 300°F (150°C) oven for 3 to 5 minutes.
  • Avoid refrigerating, as moisture can soften the cookies.
