Ingredients

  • 4 salmon fillets
  • 1 cup finely chopped almonds or almond flour
  • 2 tablespoons Dijon mustard
  • 2 eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Pat the salmon fillets dry with paper towels.
  2. Finely chop the almonds or place almond flour into a shallow bowl.
  3. In another bowl, whisk together the eggs and Dijon mustard.
  4. Season the salmon with garlic powder, paprika, salt, and black pepper.
  5. Dip each salmon fillet into the egg mixture.
  6. Press the salmon into the almond coating until evenly covered.
  7. Preheat the oven, skillet, or air fryer to medium-high heat.
  8. Cook the salmon for about 12 to 15 minutes, or until the crust is golden brown and the salmon flakes easily with a fork.
  9. Drizzle with fresh lemon juice before serving.
  10. Garnish with fresh parsley if desired.

Notes

  • Almond flour creates a finer crust while chopped almonds add extra crunch.
  • Fresh herbs like dill or thyme pair beautifully with the salmon.
  • Air frying works especially well for a crispy crust with minimal oil.
  • Pecans, walnuts, or pistachios can be substituted for almonds.
  • Store leftovers in the refrigerator for up to 3 days and reheat gently.
  • Serve with roasted vegetables, rice, asparagus, or a fresh salad.
