Almond Cookie Coffee Syrup tastes like a buttery almond cookie in a cup. It combines brown sugar, almond extract, vanilla, and a touch of cinnamon into a smooth syrup you can make in 10 minutes. Stir it into iced coffee, lattes, cold brew, and chai, or drizzle it over oatmeal and pancakes for a bakery-style flavor at home.

Ingredients

  • 1/2 cup (100 g) granulated sugar
  • 1/2 cup (100 g) packed light brown sugar
  • 1 cup (240 ml) water
  • 1 tablespoon unsalted butter
  • 1 1/2 teaspoons almond extract
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. In a small saucepan, combine the granulated sugar, brown sugar, water, butter, cinnamon, and salt.
  2. Heat over medium heat, stirring, until the sugars dissolve and the butter melts, about 4 to 5 minutes.
  3. Bring to a gentle simmer, then reduce the heat to low and cook for 5 minutes without letting it boil hard. The syrup will lightly thicken.
  4. Remove from the heat and stir in the almond extract and vanilla extract.
  5. Let the syrup cool for 15 minutes, then pour it into a clean jar or bottle. Cover and refrigerate.
  6. Shake or stir before using, since the butter and cinnamon can settle.

Notes

  • Almond extract is strong: Start with 1 teaspoon if you prefer a lighter flavor. Add more to taste after the syrup cools.
  • Add the extracts off the heat: Heat reduces their flavor.
  • How much to use: Use 1 to 2 tablespoons per 8 ounces of coffee.
  • Storage: Keep in an airtight container in the refrigerator for up to 2 weeks. Shake before using.
  • Nut-free option: This syrup uses almond extract, not almonds, but check with anyone who has a nut allergy before serving.
  • Make it dairy-free: Swap the butter for vegan butter or coconut oil, or leave it out.
  • Ways to use it: Add to iced lattes, cold foam, hot chocolate, chai, oatmeal, yogurt, or vanilla ice cream.
  • Flavor ideas: Add a pinch of nutmeg or cardamom, or a splash of maple syrup for extra warmth.
