Air Fryer Vegetables are a quick and healthy way to enjoy perfectly cooked vegetables with a crispy exterior and tender interior, using minimal oil and efficient air frying.

Ingredients

  1. 4 cups mixed vegetables (e.g., broccoli florets, bell peppers, zucchini slices, carrots, cauliflower, Brussels sprouts)
    2 tablespoons olive oil
    1 teaspoon garlic powder
1 teaspoon smoked paprika or preferred seasoning
    Salt, to taste
Freshly ground black pepper, to taste
Optional: fresh herbs like rosemary or thyme for garnish

Instructions

Preheat air fryer to 400°F (200°C) for 5 minutes.

  1. In a large bowl, toss mixed vegetables with olive oil, garlic powder, smoked paprika, salt, and pepper until evenly coated.
  2. Place vegetables in air fryer basket in a single layer, avoiding overcrowding; cook in batches if needed.
  3. Air fry for 12-15 minutes, shaking or stirring halfway through for even cooking.
  4. Check doneness; vegetables should be tender with slightly crisp edges.
  5. Remove from air fryer and garnish with fresh herbs if desired.
  6. Serve immediately.

Notes

  1. Use different seasoning blends like Italian herbs, Cajun spices, or curry powder.
  2. Add Parmesan cheese after cooking for extra flavor.
  3. Toss with balsamic glaze or lemon juice before serving.
  4. Include tofu or chickpeas for added protein.
  5. Mix root vegetables like sweet potatoes and parsnips for heartier options.
  6. Store leftovers in airtight container in refrigerator up to 3 days.
  7. Reheat in air fryer at 350°F (175°C) for 5-7 minutes to restore crispness or warm in microwave.
