A rich and comforting air fryer tomato soup made by roasting fresh tomatoes, onion, and garlic for deep, caramelized flavor. Blended smooth and finished with optional cream, it’s perfect for a cozy meal.

Ingredients

  • 4 cups fresh tomatoes, halved
  • 1 small onion, chopped
  • 3 cloves garlic
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried basil or Italian seasoning
  • 1 cup vegetable broth
  • 1/2 cup cream or milk (optional)

Instructions

  1. Preheat air fryer to 375°F (190°C).
  2. Place tomatoes, onion, and garlic in the air fryer basket.
  3. Drizzle with olive oil and sprinkle with salt, pepper, and seasoning.
  4. Air fry for 15 to 20 minutes until vegetables are soft and slightly charred.
  5. Transfer roasted vegetables to a blender.
  6. Add vegetable broth and blend until smooth.
  7. Pour soup into a pot and heat gently on the stove.
  8. Stir in cream or milk if desired.
  9. Taste and adjust seasoning.
  10. Serve warm.
