Air Fryer Roast Beef and Potatoes is a quick, flavorful, and convenient way to enjoy a classic roast dinner with tender beef and crispy potatoes. The air fryer delivers perfectly cooked beef and golden, crunchy potatoes in under an hour.

Ingredients

  1. 1.5 to 2-pound beef roast (such as sirloin tip or eye of round)
    1 pound baby potatoes, halved
    2 tablespoons olive oil
    4 cloves garlic, minced
    1 teaspoon dried rosemary
    1 teaspoon dried thyme
    Salt and freshly ground black pepper to taste

Instructions

Toss baby potatoes with 1 tablespoon olive oil, half of the minced garlic, rosemary, thyme, salt, and pepper. Set aside.

  1. Rub beef roast with remaining olive oil, garlic, salt, and pepper.
  2. Preheat air fryer to 400°F (200°C) for 5 minutes.
  3. Place beef roast in air fryer basket and arrange seasoned potatoes around it.
  4. Cook at 400°F for 25-30 minutes, flipping potatoes halfway through cooking.
  5. Check roast temperature with meat thermometer: 130°F for medium-rare, 140°F for medium. Adjust time if needed.
  6. Remove roast and let rest for 10 minutes before slicing.
  7. Serve sliced beef with crispy potatoes.
