Air Fryer Cinnamon Swirl Bread

A soft vanilla quick bread layered with buttery cinnamon sugar and cooked in the air fryer until golden and tender. Serve it plain or finish the cooled loaf with a simple vanilla glaze for an extra-sweet treat.

Ingredients

  • All-purpose flour
  • Baking powder
  • Salt
  • Granulated sugar
  • Egg
  • Milk
  • Unsalted butter, melted
  • Vanilla extract
  • Brown sugar
  • Ground cinnamon
  • Unsalted butter, melted, for the cinnamon swirl
  • Powdered sugar, optional, for the glaze
  • Milk, optional, for the glaze
  • Vanilla extract, optional, for the glaze

Instructions

  1. Preheat the air fryer to approximately 320°F (160°C), if recommended for your model.
  2. Lightly grease a small loaf pan that fits comfortably inside the air fryer basket.
  3. In a medium bowl, whisk together the flour, baking powder, salt, and granulated sugar.
  4. In another bowl, whisk together the egg, milk, melted butter, and vanilla extract.
  5. Add the wet ingredients to the dry ingredients and stir just until no large streaks of flour remain. Avoid overmixing.
  6. In a small bowl, combine the brown sugar and cinnamon, then stir in the melted butter to make the cinnamon mixture.
  7. Spread about half of the bread batter into the prepared loaf pan.
  8. Spoon some of the cinnamon mixture over the batter, then cover with the remaining batter.
  9. Add the remaining cinnamon mixture on top and gently drag a knife or skewer through the batter a few times to create a swirl.
  10. Place the loaf pan in the air fryer and cook at approximately 320°F (160°C) for 25–35 minutes.
  11. Check for doneness by inserting a toothpick into the center. Continue cooking until it comes out clean or with only a few moist crumbs. If the top browns too quickly, loosely cover it with foil only when permitted by the instructions for your air fryer.
  12. Carefully remove the loaf pan and let the bread cool for 10–15 minutes before transferring it to a cooling rack.
  13. For the optional glaze, combine powdered sugar, milk, and vanilla extract until smooth, then drizzle over the cooled bread.

Notes

  • Air fryer models and loaf-pan sizes vary, so use the cooking time as a guide and check the center for doneness.
  • Avoid overmixing the batter to help keep the finished bread tender.
  • Finely diced apple can be folded into the batter for an apple cinnamon variation.
  • Add raisins for cinnamon raisin bread or finely chopped pecans for extra crunch.
  • For a stronger cinnamon flavor, add another thin cinnamon-sugar layer without using so much filling that the center has difficulty cooking.
  • Store leftovers in an airtight container at room temperature for about 2 days or refrigerate for several additional days.
  • Cooled individual slices can be wrapped and frozen in a freezer-safe container or bag.
  • Reheat individual slices briefly in the microwave or air fryer, taking care not to overheat and dry out the bread.
