A hearty air fryer cattle drive casserole packed with seasoned ground beef, beans, vegetables, and topped with a golden biscuit or cornbread layer. This comforting dish is quick, filling, and perfect for easy family meals.

Ingredients

  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup canned beans, drained (such as pinto or kidney)
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup diced tomatoes
  • 1/2 cup tomato sauce
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup biscuit mix or cornbread mix
  • 1/2 cup milk
  • 1 large egg

Instructions

  1. In a skillet over medium heat, cook ground beef until browned and drain excess fat.
  2. Add onion and garlic, cooking until softened.
  3. Stir in beans, corn, diced tomatoes, tomato sauce, chili powder, paprika, salt, and pepper.
  4. Cook for a few minutes until well combined.
  5. Transfer mixture to an air fryer-safe dish.
  6. In a bowl, mix biscuit or cornbread mix with milk and egg to form a batter.
  7. Spread batter evenly over the beef mixture.
  8. Place dish in air fryer.
  9. Cook at 350°F (175°C) for 12 to 15 minutes until topping is golden and cooked through.
  10. Remove carefully and let cool slightly before serving.
