Ingredients
1 medium butternut squash
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon dried thyme or rosemary (optional)
Fresh parsley, chopped, for garnish (optional)
Instructions
Wash the butternut squash thoroughly and carefully cut it in half lengthwise.
Scoop out the seeds and stringy center with a spoon.
Brush the cut sides of the squash with olive oil.
Season with garlic powder, onion powder, smoked paprika, salt, black pepper, and dried thyme or rosemary if using.
Preheat the air fryer to 375°F (190°C).
Place the squash halves cut-side up in the air fryer basket or tray without overlapping.
Air fry for 30–40 minutes, depending on the size of the squash, until the flesh is fork-tender.
Allow the squash to cool for a few minutes before serving.
