Hearty breakfast burritos filled with fluffy scrambled eggs, savory breakfast sausage, crispy potatoes, and melted cheddar cheese. A quick finish in the air fryer makes the flour tortillas golden and lightly crisp while keeping the filling warm and satisfying.

Ingredients

  • Large flour tortillas
  • Large eggs
  • Breakfast sausage
  • Frozen hash browns or diced cooked potatoes
  • Shredded cheddar cheese
  • Milk
  • Unsalted butter
  • Salt
  • Black pepper
  • Cooking spray or a small amount of oil
  • Diced bell peppers, optional
  • Diced onion, optional
  • Sliced green onions, optional
  • Jalapeños, optional
  • Salsa, optional
  • Hot sauce, optional

Instructions

  1. Cook the breakfast sausage in a skillet over medium heat, breaking it into small crumbles. Once fully cooked, transfer it to a plate and drain away excess grease.
  2. Prepare the hash browns or diced potatoes until golden and cooked through. Season lightly with salt and black pepper.
  3. Crack the eggs into a bowl, add the milk, season with salt and black pepper, and whisk until evenly combined.
  4. Melt the butter in a skillet over medium-low heat. Add the eggs and gently scramble until just set, then remove from the heat.
  5. Preheat the air fryer to 350°F (175°C) if recommended for your model.
  6. Warm the flour tortillas briefly until soft and flexible.
  7. Place a portion of scrambled eggs in the center of each tortilla. Top with cooked sausage, potatoes, shredded cheddar cheese, and any desired optional vegetables.
  8. Fold the left and right sides of each tortilla toward the center, fold the bottom over the filling, and roll tightly into a burrito.
  9. Lightly coat the outside of each burrito with cooking spray or brush with a small amount of oil.
  10. Arrange the burritos seam-side down in the air fryer basket, leaving space between them for air circulation.
  11. Air fry at 350°F (175°C) for approximately 5–8 minutes, carefully turning halfway through, until the tortillas are golden and crisp and the filling is thoroughly heated.
  12. Let the burritos rest briefly before serving with salsa, hot sauce, or other desired toppings.

Notes

  • Avoid overfilling the tortillas so the burritos can be rolled tightly and remain closed during air frying.
  • Cook the scrambled eggs only until just set so they remain tender after the burritos are air fried.
  • Cooked crumbled bacon or diced ham can replace the breakfast sausage.
  • For a meatless variation, omit the sausage and increase the amount of eggs, potatoes, peppers, or onions.
  • Add jalapeños, pepper Jack cheese, or hot sauce for a spicier breakfast burrito.
  • For make-ahead burritos, allow hot fillings to cool slightly before assembly to help prevent soggy tortillas.
  • Store refrigerated burritos individually wrapped in an airtight container for 3–4 days.
  • Assembled and cooled breakfast burritos can be individually wrapped and frozen in a freezer-safe container or bag.
  • Reheat refrigerated or frozen burritos in the air fryer until the center is thoroughly hot, allowing additional time for frozen burritos.
