These Air Fryer Bombay Potatoes are crispy on the outside, fluffy on the inside, and coated in a bold blend of aromatic Indian-inspired spices. They make a flavorful side dish or snack that pairs perfectly with curries, grilled meats, or rice.

Ingredients

  • 1 1/2 pounds baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh cilantro, chopped, for garnish

Instructions

  1. Wash and dry the baby potatoes, then cut any large potatoes into evenly sized halves.
  2. Boil the potatoes for 8–10 minutes until just fork-tender. Drain and let them cool slightly.
  3. Place the potatoes in a large bowl and drizzle with olive oil.
  4. Add the cumin, coriander, turmeric, paprika, garam masala, chili powder, garlic powder, onion powder, salt, and black pepper, then toss until evenly coated.
  5. Preheat the air fryer to 390°F (200°C).
  6. Arrange the potatoes in a single layer in the air fryer basket.
  7. Air fry for 15–18 minutes, shaking the basket halfway through, until crispy and golden brown.
  8. Drizzle with fresh lemon juice, garnish with chopped cilantro, and serve immediately.

  • Boiling the potatoes before air frying helps create a fluffy interior and crispy exterior.
  • Add sautéed mustard seeds and curry leaves for a more traditional flavor.
