Aguachile is a vibrant Mexican seafood dish featuring tender shrimp cured in fresh lime juice with a bold green chili sauce, crisp vegetables, and creamy avocado. It’s a refreshing appetizer or light meal that’s perfect for warm weather.

Ingredients

  • 1 1/2 lb fresh raw shrimp, peeled, deveined, and butterflied
  • 1 cup fresh lime juice
  • 2 serrano or jalapeño peppers
  • 1/2 cup fresh cilantro
  • 1 cucumber, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1 avocado, sliced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Ice water for chilling the shrimp (optional)

Instructions

  1. Butterfly the shrimp and arrange them in a shallow dish.
  2. Pour the fresh lime juice over the shrimp until fully submerged.
  3. Refrigerate for 15 to 20 minutes, or until the shrimp turn opaque.
  4. Blend the serrano or jalapeño peppers, cilantro, a small amount of lime juice, salt, and black pepper until smooth.
  5. Drain most of the lime juice from the shrimp, leaving a small amount behind.
  6. Pour the green chili sauce over the shrimp and gently toss to coat.
  7. Arrange the cucumber slices, red onion, and avocado around the shrimp.
  8. Chill for a few minutes if desired, then serve immediately.
  9. Serve with tostadas, tortilla chips, or crunchy crackers.

  • Use the freshest, highest-quality shrimp from a trusted source.
  • Substitute scallops or cooked shrimp if preferred.
  • Add sliced radishes or diced mango for extra flavor and texture.
  • Use habanero peppers for a spicier version or dried chilies for a red aguachile.
  • Prepare the vegetables and sauce ahead of time, but marinate the shrimp just before serving.
