I love Kani Salad because I can prepare it in about 15 minutes without cooking. The cucumber and carrots provide plenty of crunch, while the imitation crab adds a mild seafood flavor that pairs perfectly with the creamy dressing.

For the Dressing

  • 1/3 cup Japanese mayonnaise

  • 1 teaspoon soy sauce
  • 1/2 teaspoon sesame oil
  • 1 teaspoon fresh lemon or lime juice
  • 1/2 teaspoon sugar, optional

Directions

  1. I start by pulling the imitation crab sticks apart into thin strips. I can also slice them thinly with a knife if I want more uniform pieces.
  2. I julienne the cucumber into thin strips. If my cucumber contains a lot of seeds and moisture, I remove the watery center first.
  3. I cut the carrot into thin matchsticks or use a julienne peeler to make preparation faster.
  4. If I’m using mango, I peel it and slice it into thin strips similar in size to the cucumber and carrot.
  5. I combine the Japanese mayonnaise, sriracha, rice vinegar, soy sauce, sesame oil, citrus juice, and optional sugar in a small bowl.
  6. I whisk the dressing until it’s smooth and creamy. I taste it and add more sriracha if I want additional heat.
  7. I place the shredded crab, cucumber, carrot, mango, and green onions in a large bowl.
  8. I pour the dressing over the ingredients and gently toss until everything is lightly and evenly coated.
  9. I sprinkle toasted sesame seeds over the salad and add tobiko or masago if I’m using it.
  10. I serve my Kani Salad immediately or refrigerate it briefly before serving if I prefer it extra cold.

Variations

Spicy Kani Salad

Storage/Reheating

I store leftover Kani Salad in an airtight container in the refrigerator and prefer eating it within 1–2 days. The cucumber releases moisture as it sits, so I find the salad has its best texture when freshly prepared.

If I want to prepare the salad ahead, I keep the dressing separate from the crab and vegetables. I toss everything together shortly before serving to preserve the crisp texture.

I don’t recommend freezing Kani Salad because freezing can negatively affect the texture of the cucumber, mayonnaise dressing, and imitation crab.

I also don’t reheat this dish. I serve Kani Salad chilled or cool from the refrigerator.
