Ingredients
- 8 oz pasta (penne, rigatoni, or spaghetti)
- 4 oz goat cheese (soft, plain, or herbed)
- 2 cups cherry tomatoes
- 3 tbsp olive oil
- 3 garlic cloves, minced
- 1 tsp dried oregano
- ½ tsp red pepper flakes (optional)
- Salt and black pepper, to taste
- ¼ cup fresh basil, chopped
- ¼ cup grated Parmesan (optional)
- ½ cup reserved pasta water
Instructions
- Preheat oven to 400°F (200°C).
- In a baking dish, toss cherry tomatoes with olive oil, garlic, oregano, red pepper flakes, salt, and pepper.
- Place the goat cheese in the center of the dish and drizzle with a little more olive oil.
- Bake for 25-30 minutes, or until tomatoes burst and goat cheese is softened.
- Meanwhile, cook pasta according to package instructions. Reserve ½ cup pasta water before draining.
- Remove the baking dish from the oven and mash the goat cheese and tomatoes with a spoon, creating a creamy sauce.
- Add the cooked pasta and reserved pasta water, stirring until well combined.
- Garnish with fresh basil and Parmesan (if using).
