Ingredients
1 cup old-fashioned rolled oats
1 cup milk of choice
1/2 cup plain or vanilla Greek yogurt
2 tablespoons unsweetened cacao or cocoa powder
1 tablespoon chia seeds
2 tablespoons pure maple syrup or honey
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cardamom
1/8 teaspoon ground cloves
Pinch of ground nutmeg
Pinch of black pepper, optional
Pinch of salt
Sliced banana, optional for topping
Cacao nibs or chocolate chips, optional for topping
Chopped almonds or pecans, optional for topping
Almond or peanut butter, optional for topping
Greek yogurt, optional for topping
Ground cinnamon, optional for topping
Maple syrup, optional for topping
Instructions
Add the rolled oats, cacao or cocoa powder, chia seeds, cinnamon, ginger, cardamom, cloves, nutmeg, optional black pepper, and salt to a large bowl or container.
Stir thoroughly until the cacao and spices are evenly distributed throughout the oats.
Add the milk, Greek yogurt, maple syrup or honey, and vanilla extract. Stir thoroughly until smooth and no dry pockets of cacao remain.
Cover the container and refrigerate for at least 6 hours or overnight, allowing the oats and chia seeds to absorb the liquid.
Stir the chilled oats thoroughly before serving. If they are thicker than desired, add a splash of milk until the preferred consistency is reached.
Taste and adjust the sweetness or chai spices if desired, adding an extra pinch of cinnamon or cardamom for a stronger spiced flavor.
Divide the overnight oats between two bowls or jars and add sliced banana, cacao nibs or chocolate chips, chopped nuts, nut butter, Greek yogurt, cinnamon, or maple syrup as desired.
Notes
For extra chocolate flavor, add dark chocolate chips or cacao nibs before chilling or increase the cacao powder slightly.
For a dairy-free version, use almond, oat, soy, or coconut milk with a thick plant-based yogurt.
For stronger chai flavor, slightly increase the ginger and cardamom and include the optional black pepper.
For banana chocolate chai oats, mash 1/2 ripe banana into the mixture before refrigerating.
Almond butter, cashew butter, or peanut butter can be stirred into the oats for extra richness.
For mocha chai oats, add a small amount of instant espresso powder to deepen the chocolate flavor.
Store the overnight oats in airtight containers in the refrigerator for up to 4 days.
Keep crunchy toppings separate until serving to preserve their texture.
Serve cold or gently warm individual portions in the microwave or a saucepan, adding a splash of milk as needed. Add fresh fruit and crunchy toppings after heating.
