1–2 chipotle peppers in adobo sauce, finely chopped
1 teaspoon adobo sauce
1 teaspoon lime juice
1/2 teaspoon garlic powder
Pinch of salt
8 slices whole grain, sourdough, or ciabatta bread
12 ounces sliced deli turkey breast
1 large ripe avocado, sliced
4 slices provolone, Swiss, or cheddar cheese (optional)
4 lettuce leaves
1 large tomato, sliced
1/4 small red onion, thinly sliced
8 slices cooked bacon (optional)
2 teaspoons butter or olive oil (optional, for toasting the bread)
Instructions
In a small bowl, combine the mayonnaise, chopped chipotle peppers, adobo sauce, lime juice, garlic powder, and salt until smooth.
Lightly toast the bread with butter or olive oil if desired.
Spread a generous layer of chipotle mayo on one side of each slice of bread.
Layer the lettuce, sliced turkey, cheese if using, avocado, tomato, red onion, and bacon if using.
Top with the remaining slice of bread.
