This 3 Minute Carrot Cake in a Mug is a soft, moist, single-serving dessert packed with fresh carrots and warm spices. Ready in minutes, it’s the perfect quick treat when you’re craving classic carrot cake without baking a full cake.

Ingredients

  • 1/4 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 2 tablespoons brown sugar
  • Pinch of salt
  • 2 tablespoons milk
  • 1 tablespoon vegetable oil or melted butter
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons finely grated carrot
  • 1 tablespoon chopped walnuts or pecans (optional)
  • 1 tablespoon raisins (optional)
  • Optional topping: 1 tablespoon cream cheese, 1 tablespoon powdered sugar, 1/4 teaspoon vanilla extract, 1 teaspoon milk, and chopped walnuts

Instructions

  1. Lightly grease a microwave-safe mug with a little oil or butter.
  2. Combine the flour, baking powder, cinnamon, nutmeg, brown sugar, and salt directly in the mug.
  3. Stir in the milk, oil, and vanilla extract until the batter is smooth.
  4. Fold in the grated carrot along with the chopped nuts or raisins, if using.
  5. Microwave on high for 90 seconds to 2 minutes, or until the center is just set.
  6. Let the cake cool for about 1 minute before serving.
  7. If desired, mix the cream cheese, powdered sugar, vanilla extract, and milk until smooth to make a quick frosting.
  8. Spread or drizzle the frosting over the warm mug cake and garnish with chopped walnuts before serving.

Notes

  • Add shredded coconut or mini chocolate chips for extra flavor and texture.
  • Substitute pecans for walnuts if preferred.
  • Replace part of the all-purpose flour with whole wheat flour for a heartier cake.
  • Add a pinch of ground ginger or cloves for extra warmth.
  • For an oven version, bake in an oven-safe ramekin at 350°F (175°C) for 15 to 20 minutes.
  • Freshly grated carrots provide the best moisture and texture.
  • Enjoy immediately for the softest texture, or refrigerate leftovers for up to 1 day.
  • Reheat in the microwave for 10 to 15 seconds before serving.
