Zucchini Pizza with Basil and Lemon is a light, fresh, and flavorful twist on traditional pizza using thinly sliced zucchini as the base. Topped with fresh basil, zesty lemon, and melty cheese, it’s a healthy, low-carb, and nutritious appetizer or light meal.

Ingredients

  1. 2 medium zucchinis, sliced lengthwise into 1/4-inch thick strips
  2. 1 cup shredded mozzarella cheese (or vegan cheese alternative)
  3. 1/4 cup grated Parmesan cheese (optional)
  4. 1 tablespoon olive oil
  5. 1 clove garlic, minced
  6. Salt and freshly ground black pepper, to taste
  7. 1/4 cup fresh basil leaves, torn
  8. Zest of 1 lemon
  9. Optional: cherry tomatoes or sliced olives for extra toppings

Instructions

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  1. Arrange zucchini slices on the baking sheet in a single layer.
  2. Brush zucchini slices lightly with olive oil and sprinkle with minced garlic, salt, and pepper.
  3. Bake zucchini for 8-10 minutes until slightly tender.
  4. Remove from oven and sprinkle mozzarella and Parmesan cheeses evenly over each slice.
  5. Return to oven and bake for another 5-7 minutes until cheese is melted and bubbly.
  6. Remove from oven and immediately sprinkle with fresh basil leaves and lemon zest.
  7. Optional: add cherry tomatoes or olives before serving.
  8. Serve warm.
