Zucchini Patties with Chicken are savory, protein-packed patties made with grated zucchini, ground chicken, and simple seasonings. These easy-to-make, veggie-filled bites are perfect for healthy dinners, meal prep, or kid-friendly lunches.

Ingredients

  • 1 pound ground chicken
  • 1 medium zucchini, grated
  • 1 large egg
  • 1/3 cup breadcrumbs or almond flour (for low-carb)
  • 1 garlic clove, minced
  • 1/4 cup onion, finely chopped or grated
  • 2 tablespoons chopped fresh parsley or dill (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil or cooking spray (for frying or baking)

Instructions

  1. Grate the zucchini and squeeze out excess moisture using a clean kitchen towel or cheesecloth.
  2. In a large bowl, combine ground chicken, zucchini, egg, breadcrumbs, garlic, onion, herbs, salt, and pepper.
  3. Mix until evenly combined. The mixture should be moist but able to hold its shape.
  4. Form into 10–12 small patties using your hands.
  5. Heat a skillet with a little olive oil over medium heat. Cook patties for 4–5 minutes per side until golden brown and cooked through (165°F internal temperature).
  6. Alternatively, bake at 400°F (200°C) for 20–25 minutes on a lined baking sheet, flipping halfway through.
  7. Serve hot with your favorite dipping sauce or side dish.

  • For a firmer texture, be sure to squeeze all the water out of the zucchini.

  • Air fryer option: Cook at 375°F for 10–12 minutes, flipping halfway through.
