Zucchini fritters are crispy on the outside and tender on the inside, combining grated zucchini with flavorful seasoning for a savory snack or side dish.

Ingredients

  1. 2 medium zucchinis, grated
    1/2 teaspoon salt
    1/4 cup all-purpose flour (can substitute with gluten-free flour)
    1/4 cup breadcrumbs (optional for extra crunch)
    1/4 cup grated Parmesan cheese (optional for extra flavor)
    2 large eggs
    2 tablespoons fresh parsley, chopped (or dill)
    1/2 teaspoon garlic powder
    1/4 teaspoon black pepper
    2 tablespoons olive oil (or vegetable oil) for frying
    Sour cream or yogurt, for serving (optional)

Instructions

Prepare the zucchini: Grate the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth, and squeeze out any excess moisture.

  1. Mix the ingredients: In a large bowl, combine the grated zucchini, salt, flour, breadcrumbs, Parmesan cheese, eggs, parsley, garlic powder, and pepper. Stir everything together until well combined.
  2. Heat the oil: Heat the olive oil in a large skillet over medium heat until hot but not smoking.
  3. Form and fry the fritters: Using a spoon, scoop about 2 tablespoons of the zucchini mixture, form into a small patty, and gently press it down to flatten. Fry the fritters for about 3-4 minutes per side until golden brown and crispy. Flip carefully with a spatula.
  4. Drain and serve: Transfer cooked fritters to a paper towel-lined plate to drain excess oil. Serve immediately with sour cream or yogurt if desired.
