Zucchini Fritters

Zucchini fritters are crispy, delicious, and easy to make. Combining grated zucchini with a simple batter, these fritters are perfect as a snack, side dish, or light main course. They’re crispy on the outside, tender on the inside, and can be served with a variety of dipping sauces.

Ingredients

  1. 2 medium zucchinis, grated
    1/2 cup all-purpose flour
    1/4 cup grated Parmesan cheese
    1 large egg
    2 cloves garlic, minced
    1/4 teaspoon salt
    1/4 teaspoon black pepper
    1/2 teaspoon dried oregano (optional)
    Olive oil (for frying)

Instructions

Grate the zucchinis using a box grater or food processor. Squeeze out as much moisture as possible using a clean kitchen towel or cheesecloth.

  1. In a large bowl, combine the grated zucchini, flour, Parmesan cheese, egg, garlic, salt, pepper, and oregano (if using). Mix until a thick batter forms. If the batter feels too wet, add a little more flour.
  2. Heat 1-2 tablespoons of olive oil in a large skillet over medium heat.
  3. Once the oil is hot, spoon about 2 tablespoons of the zucchini batter into the skillet and flatten with the back of the spoon. Cook for 2-3 minutes on each side until golden and crispy.
  4. Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
  5. Serve hot with your choice of dipping sauce like sour cream, Greek yogurt, or spicy mayo.

Notes

  1. For a vegan version, substitute the egg with a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water) and use dairy-free cheese.
  2. Feel free to add other vegetables like grated carrots or spinach for extra flavor and nutrients.
  3. For extra crispiness, ensure the oil is hot before frying and avoid overcrowding the pan.
  4. Leftovers can be stored in the fridge for up to 2 days. Reheat in a skillet or oven to crisp them up again.
