Ingredients

For the Fritters

  • 2 medium zucchinis, grated
  • 1 cup corn kernels
  • ½ cup crumbled feta cheese
  • ½ cup all-purpose flour
  • ¼ cup chopped fresh herbs (parsley or dill)
  • 2 eggs, lightly beaten
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon baking powder
  • 2 tablespoons olive oil (for frying)

For the Lemon Yogurt Dip

  • ½ cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • ½ teaspoon honey
  • Salt and pepper to taste

Instructions

Prepare the Zucchini – Grate the zucchinis and squeeze out excess moisture using a clean kitchen towel or cheesecloth.
2️⃣ Mix the Batter – In a large bowl, combine zucchini, corn, feta, flour, herbs, eggs, salt, pepper, garlic powder, and baking powder. Stir well.
3️⃣ Heat the Oil – Warm olive oil in a skillet over medium heat.
4️⃣ Form the Fritters – Drop about 2 tablespoons of batter into the skillet and flatten slightly.
5️⃣ Cook Until Golden – Fry for 3-4 minutes per side or until golden brown and crispy. Drain on a paper towel-lined plate.
6️⃣ Make the Dip – In a small bowl, mix Greek yogurt, lemon juice, zest, honey, salt, and pepper. Stir until smooth.
