Ingredients

  1. 45 medium yellow squash, sliced
  2. 1/2 onion, finely chopped
  3. 2 tablespoons butter
  4. 1/2 cup sour cream
  5. 1/2 cup mayonnaise
  6. 1 1/2 cups shredded cheddar cheese (divided)
  7. 1/2 cup grated Parmesan cheese
  8. 1/2 teaspoon garlic powder
  9. 1/2 teaspoon onion powder
  10. Salt and pepper to taste
  11. 1 cup crushed Ritz crackers or breadcrumbs
  12. 2 tablespoons butter, melted (for topping)

Instructions

Preheat your oven to 350°F (175°C) and grease a 9×9-inch casserole dish.

  1. In a skillet, melt 2 tablespoons butter over medium heat and sauté the sliced squash and chopped onion until tender (5-7 minutes). Season with salt and pepper. Drain excess liquid.
  2. In a bowl, combine sour cream, mayonnaise, 1 cup shredded cheddar cheese, Parmesan, garlic powder, onion powder, and the cooked squash mixture. Adjust seasoning with salt and pepper.
  3. Transfer the squash mixture to the casserole dish and top with the remaining cheddar cheese.
  4. Mix melted butter with the breadcrumbs and sprinkle over the casserole.
  5. Bake for 25-30 minutes, or until golden brown and bubbling.
  6. Let cool for a few minutes before serving. Serve warm as a side dish or light main course.
