In a large bowl, dissolve yeast in warm water with honey. Let sit for 5–10 minutes until foamy.
- Add olive oil, salt, and whole wheat flour. Gradually stir in all-purpose or bread flour until a soft dough forms.
- Knead dough on a lightly floured surface for 8–10 minutes until smooth and elastic.
- Place dough in a greased bowl, cover with a towel, and let rise in a warm place for 1 to 1½ hours until doubled in size.
- Punch down the dough and shape into a loaf. Place in a greased loaf pan.
- Cover and let rise again for 30–45 minutes until puffy.
- Preheat oven to 375°F (190°C).
- Optional: Brush top with water or egg wash and sprinkle with oats or seeds.
- Bake for 30–35 minutes or until the loaf sounds hollow when tapped.
- Let cool on a wire rack for at least 1 hour before slicing.
