Ingredients

1 can white beans (cannellini, Great Northern, or navy beans), drained and rinsed
1 ripe avocado
1 tablespoon fresh lemon juice
1 tablespoon olive oil
1 clove garlic, minced (optional)
2 tablespoons fresh herbs like cilantro or parsley, chopped
Salt, to taste
Pepper, to taste

Instructions

  1. Drain and rinse the white beans if using canned.
  2. In a large bowl, mash the avocado slightly, keeping some texture.
  3. Add the white beans to the bowl and mix gently to combine.
  4. Drizzle with olive oil and fresh lemon juice.
  5. Add minced garlic if using, and season with salt and pepper.
