A refreshing summer salad made with juicy watermelon, salty feta, and fresh mint, lightly dressed with olive oil and lime juice for a perfect balance of sweet, salty, and tangy flavors.

Ingredients

  • 6 cups fresh watermelon, cubed
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, chopped or torn
  • 1/4 small red onion, thinly sliced (optional)
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh lime or lemon juice
  • Salt and black pepper, to taste

Instructions

  1. Cut the watermelon into bite-sized cubes and place them in a large mixing bowl.
  2. Add the crumbled feta cheese and chopped mint leaves.
  3. If using, add thinly sliced red onion for an extra layer of flavor.
  4. Drizzle with olive oil and freshly squeezed lime or lemon juice.
  5. Gently toss to combine, being careful not to crush the watermelon.
  6. Season lightly with salt and black pepper to taste.
  7. Serve immediately or chill for 15–20 minutes before serving for extra refreshment.
