Ingredients

  1. 4 cups watermelon, cubed (about half a medium watermelon)
    1 cup feta cheese, crumbled or cubed
    1/4 cup fresh mint leaves, chopped
    1 tablespoon olive oil
    1 tablespoon lime juice (or lemon juice)
    Salt and pepper, to taste
    Optional: 1/4 cup red onion, thinly sliced
    Optional: 1/4 cup cucumber, diced

Instructions

Prepare the watermelon: Cut the watermelon into small cubes, making sure to remove any seeds. You can also use a melon baller for a more uniform look.

  1. Assemble the salad: In a large bowl, combine the cubed watermelon, crumbled feta cheese, and fresh mint leaves. If you’re using red onion or cucumber, add them to the salad as well.
  2. Make the dressing: In a small bowl, whisk together the olive oil, lime juice, salt, and pepper until well combined.
  3. Toss the salad: Drizzle the dressing over the watermelon mixture and toss gently to combine. Be careful not to break up the watermelon too much.
