Ingredients

  • 2 medium beets, peeled and grated
  • 2 medium carrots, peeled and grated
  • 1 crisp apple, julienned or grated
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon honey or maple syrup
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley or mint (optional)
  • 2 tablespoons chopped walnuts or sunflower seeds (optional)

Instructions

  1. Peel and grate the beets and carrots using a box grater or food processor.
  2. Core and julienne or grate the apple. Toss with a small amount of lemon juice if preparing ahead to prevent browning.
  3. In a small bowl, whisk together the lemon juice, olive oil, honey or maple syrup, salt, and black pepper.
  4. In a large bowl, combine the grated beets, carrots, and apple.
  5. Pour the dressing over the salad and toss well to coat evenly.
  6. Stir in chopped parsley or mint if using.
  7. Sprinkle with walnuts or sunflower seeds just before serving for added crunch.
