2 tablespoons olive oil
1 medium onion, chopped
3 cloves garlic, minced
1 (14-ounce) can diced tomatoes
2 (15-ounce) cans chickpeas, drained and rinsed
4 cups fresh spinach or kale, chopped
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon crushed red pepper flakes (optional)
Salt and freshly ground black pepper, to taste
1/4 cup vegetable broth or water
Fresh parsley or basil for garnish
Optional: lemon wedges for serving
Instructions
Heat olive oil in a large skillet over medium heat.
Add chopped onion and sauté until translucent, about 5 minutes.
Stir in minced garlic and cook for another minute until fragrant.
Add diced tomatoes, chickpeas, oregano, thyme, red pepper flakes, salt, and pepper.
Pour in vegetable broth and stir to combine.
Simmer uncovered for 10-15 minutes, allowing flavors to meld and sauce to thicken slightly.
Stir in chopped spinach or kale and cook until wilted, about 3-5 minutes.
Taste and adjust seasoning as needed.
Garnish with fresh herbs and serve with lemon wedges if desired.
Notes
Add cooked pasta or quinoa to make it more filling.
Use cannellini beans instead of chickpeas for a creamier texture.
Incorporate roasted red peppers or sun-dried tomatoes for extra flavor.
