Ingredients

  5. 1/4 teaspoon ground nutmeg
  6. 1/4 teaspoon salt
  7. 3/4 cup almond milk or any plant-based milk
  8. 2 tablespoons maple syrup
  9. 1 teaspoon vanilla extract
  10. 2 tablespoons coconut oil or vegetable oil (melted)

Instructions

Cook the sweet potato: Steam or boil the sweet potato until fork-tender, about 10-12 minutes. Mash until smooth.

  1. Prepare the waffle batter: In a large mixing bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
  2. Mix the wet ingredients: In a separate bowl, combine almond milk, maple syrup, vanilla extract, and melted coconut oil. Add the mashed sweet potato and stir until fully combined.
  3. Combine wet and dry ingredients: Pour the wet mixture into the dry ingredients and stir gently until just combined. The batter should be thick but pourable.
